Score: 86 Process: Pulped Sensory: Our goal for Yellow Hive is that it should be the sweetest coffee of our menu. To do that, we mixed different yellow varietals, which are known to produce sweeter beans: the yellow color on the cherries reflects more sunlight than red cherries - this reflection makes yellow cherries cooler, slowing down the maturation process: a slower maturation means that the beans have better conditions and more time to develop sugars. We chose the very ripest cherries and pulped them. The result is a very round mouthfeel that brings swiss milk chocolate and toffee paired with citric acidity of yellow fruits. Low-Caf Reserve
Score: 89 Process: Pulped Sensory: The Low-Caf Reserve is a coffee made exclusively from low-caffeine varietals, namely Aramosa and Laurina. These two cultivars have been under study in Daterra for over 20 years and now, fully adapted to our terroir, their beans make not only naturally low-caf coffees but also delicious ones: the cup has a floral character in which you can expect notes of red berries, tropical fruits, and grapes.
