Sensory: We make Moonlight by mixing two processes: natural (dried-on-tree) and pulped (semi-washed). This blend is curated specifically to bring a sweet base and a citric touch for a refreshing cold brew, but it also shines as a very balanced and round espresso. We blend two different processes to achieve a more complex cup with the best of both worlds: high sweetness with refreshing fruit notes. The aroma gives away the floral profile of Blossom - you’ll find jasmine and raspberries. On the flavor, more raspberries but also mango, nuts, and honey like sweetness and lots of caramel in the finish.

Sensory: Our goal for Yellow Hive is that it should be the sweetest coffee of our menu. To do that, we mixed different yellow varietals, which are known to produce sweeter beans: the yellow color on the cherries reflects more sunlight than red cherries - this reflection makes yellow cherries cooler, slowing down the maturation process: a slower maturation means that the beans have better conditions and more time to develop sugars. We chose the very ripest cherries and pulped them. The result is a very round mouthfeel that brings swiss milk chocolate and toffee paired with citric acidity of yellow fruits.

Sensory: While building our menu during every crop, we find some gems here and there: coffees that stand out, but don’t quite fit anywhere else in our menu. These very special lots is our year’s reserve. This year, our choice is made from very ripe, juicy cherries. After pulped and dried, the beans became this very floral cup with sweetness that will immediately remind you of honey. You’ll also find apricots and almonds and a touch of juicy ripe fruits.

Sensory: After evaluating the whole crop, we selected the very best organic lot produced and separated its Moka (MK) our Peaberry beans - a MK bean happen when, for some reason, the coffee cherry produces only one bean instead of two and this sole bean acquires a smaller and rounder shape. In this complex cup, you can expect to find black tea and brown sugar, plums and a heavy body

Low-Caf Reserve

Sensory: The Low-Caf Reserve is a coffee made exclusively from low-caffeine varietals, namely Aramosa and Laurina. These two cultivars have been under study in Daterra for over 20 years and now, fully adapted to our terroir, their beans make not only naturally low-caf coffees but also delicious ones: the cup has a floral character in which you can expect notes of red berries, tropical fruits, and grapes. The complex acidity is both lactic and phosphoric, making this cup very exciting.
